Potatoes - Mid Season - Kerr\'s Pink - Org Hrlm
Kerr's Pink Organic Heirloom Potato is an old Irish variety introduced in 1917. The Kerr's Pink are round tubers with pink blushed beige skin, darker pink eyes of medium depth and white flesh. The flowers are white on this medium spreading plant. Kerr's Pink has a texture that the Irish call “floury”; that is, not really mealy like a russet, but drier than most varieties. This is a great salad potato but also used roasted, boiled, and since it’s delicately creamy, lends itself well to mashing. In Ireland, potatoes are never peeled (retains the vitamins); but washed and put in water which is then brought to a boil. 2/3 of the water is then poured off and the potatoes are allowed to steam. Superb flavor! When stored properly, potatoes can last for 3-6 months. It is best to store them in a cool, dry, dry area. . ... more information
