Island Sunshine Organic Potato was developed in the PEI's. It originated from an open pollinated cross between "Irene" and an unknown male parent found by E. & G. Loo in Kensington, Prince Edward Island, in 1984. Its production may surpass Yukon Gold. The tubers do not "ramble" like Yellow Finns. Best described as "all purpose" and most resistant of all to late blight. The Island Sunshine plant is of medium height, spreading; stems weakly pigmented; wings not prominent; and medium to strongly swollen nodes. Island Sunshine is a medium to high yielding variety; good storability; long dormancy period. Store them in a cool, dark, dry, well-ventilated place. Don't refrigerate them--doing so converts some of the potato's starch to sugar. And don't expose them to direct sunlight, which turns them green and makes them bitter. . ... additional info
