The Red Thumb Organic Potato is somewhat new and rather rare with its one-of-a-kind brilliant-red skin and reddish-pink flesh. Cut a tuber in half and you can really see the thumb outlined in red color. The medium to long tubers have very shallow eyes and come out of the ground clean as a whistle. This fingerling is very uniformly shaped and produces prolific yields, and it isn't as starchy as some potato varieties. It is very well suited to the restaurant trade, and the uniformity of this particular potato makes it a favorite among chefs. Red Thumb potato is good for roasting, frying, or boiled. Store unwashed fingerlings at room temperature in a dark, cool, airy location, such as in a basket or open paper bag.
