The Red Gold Organic Potato is round and has medium-size tubers with pale orange-red skin and yellow semi-moist flesh. The stems are medium green with some reddish pigment speckled on it; slight straight wings. This potato has a wonderful flavor and tastes excellent cooked any way. Resistant to disease and drought but does not do well with over-watering. Red Gold is a medium yielding variety; high number of tubers per plant; medium-small size; short dormancy; medium specific gravity. Don't refrigerate them--doing so converts some of the potato's starch to sugar. And don't expose them to direct sunlight, which turns them green and makes them bitter.
