Parsnips - Harris Model
Harris Model Parsnips have long white roots, averaging 10" to 12" long and 3" at the crown. To obtain smooth tapered roots, grow in deep, uncompacted soil. Harris Model is a good overwintering type with very tender white flesh and no sideroots. It is very sweet when harvested in the spring, but can be left in the ground all winter without protection for spring use; freezing improves flavor. Parsnips are ideally suited to the northern climate and are best harvested after a hard frost. A parsnip is similar to a carrot, a cool weather vegetable. Plant as soon as the ground can be worked in the spring. Before sowing make sure the soil is well dug and free from stones to a spade's depth.
