Mustard - Red Giant

The Mustard Gai Choy Red Giant, 'Brassica juncea (integlifolia group)', is one of the most delicious greens available. It has quite a different flavor than American mustards. Red Giant Mustard is particularly overlooked by American gardeners for spinach and that is a shame. The unique, spicy flavor is excellent in mixed salads or straight as its own salad, wilted like spinach or chard and wrapped in prosciutto, steamed and tossed with sesame oil and soy sauce, or stir fried with ginger, bok, choy, snow peas or chicken. The roots are also edible.

Red Giant has slightly savored, dark purplish-red leaves that are thick and tender. Red Giant is particularly tolerant to cold and has wide soil adaptability. The nutritional value of mustard is very high with huge amounts of vitamin A and vitamin C. It also contains iron, phosphorous and some B vitamins. Plant as soon as the soil can be worked in the spring and in mild climates plant in late fall for winter and early spring harvest. Mustard is an excellent container plant and is an attractive variety with a coppery glow in the garden.
